About this wine
Vineyard and terroir
The Pinot Grigio comes from biodynamically farmed vineyards in Abruzzo, on the Adriatic coast, at 400–500 metres above sea level. The deep soils consist mainly of clay with chalk deposits. The grapes are estate-grown and harvested by hand at optimal ripeness.
The estate’s biodynamic practices include sustainable vineyard development, reducing or eliminating hazardous pest-control treatments, restricting copper use, producing its own compost and fertiliser, practising crop rotation, using resources responsibly and recycling waste.
Vinification
The wine is produced by the traditional Ancestrale method. A short pre-fermentation maceration is followed by a single fermentation directly in the bottle. The bubbles develop without sugar or sulfites. The yeast sediment remains in the bottle, helping to protect the wine from spoilage.
Tasting profile
The yeast sediment contributes complexity and a creamy texture.
