About this wine
Vineyard and terroir
The grapes are biodynamically grown on moderately aged, low-yielding vines planted in loose soils.
Grapes
Pecorino accounts for at least 85% of the blend, supplemented by other permitted local white varieties.
Vinification
The grapes are harvested by hand and pressed as whole bunches in a pneumatic press. Fermentation occurs spontaneously with naturally occurring yeasts in stainless-steel tanks at 12–14 °C for 30 days; brief skin contact is permitted. The wine is gently decanted for natural clarification and bottled without filtration.
Ageing
The wine matures on its fine lees in stainless-steel tanks, followed by additional ageing in bottle.
Serving and pairing
Pair with refined seafood dishes, medium-aged cheeses, first courses or white meat.
