About this wine
Vineyard and terroir
The organically farmed vines grow at 440 m in Orsogna, on limestone soils 16 km from both the Adriatic Sea and the Maiella. Cantina Orsogna uses biological pest-control methods and works to improve soil fertility and the biological quality of the surrounding air and water. The vineyards hold organic and Biodiversity Friend certification, the latter based on an international standard owned by WBA Onlus.
Vinification
The grapes are harvested at a sugar concentration of approximately 210 g/L. Fermentation uses selected yeasts isolated from cherry-blossom pollen collected from beehives within the winery’s agricultural ecosystems. The first fermentation continues until residual sugar reaches 20 g/L, after which the must is chilled to 4 °C.
A second fermentation is initiated in sealed tanks with the same cherry-blossom-pollen yeast. It relies on the grapes’ remaining natural sugars rather than added sucrose. The finished wine has 10 g/L residual sugar and a pressure of 2.5 atmospheres.
Tasting profile
Delicate and gently sparkling, with finesse, a creamy texture and a distinct Merlot character.
