About this wine
Vineyard and terroir
The organically grown fruit comes from mature, low-yielding vines planted in limestone soils.
Vinification
The grapes are harvested by hand and gently pressed in a pneumatic press. Fermentation takes place in stainless-steel tanks with yeast made from chestnut pollen, followed by a second fermentation in pressurized tanks using the same yeast.
Serving and pairing
Pairs with refined seafood dishes, medium-aged cheeses, first courses and white meat.
