About this wine
Vineyard and terroir
The Pecorino grapes are organically grown on low-yielding, moderately aged vines planted in loose soils.
Grapes
The blend contains at least 85% Pecorino, with other permitted local white varieties.
Vinification
The grapes are harvested by hand and pressed as whole bunches in a pneumatic press. Fermentation takes place at a controlled temperature in stainless-steel tanks, using selected yeasts derived from the pollen of blackberry plants growing in Maiella Park.
Ageing
The wine matures on its fine lees in steel tanks, followed by additional time in bottle.
Serving and pairing
Pair with refined seafood dishes, medium-aged cheeses, first courses or white-meat dishes.
