About this wine
Vineyard and terroir
Sangiovese is selected from cooler sites in the various plots at Località Capraia. The 45-hectare vineyard holding lies at an average elevation of 300 m, with varied exposures. The medium-textured soils are rich in clay and Galestro stone. Vine age ranges from new plantings to 35 years, at a density of 5,000 vines per hectare and an average yield of 1.2 kg per vine. Spur and cane pruning are used. The fruit is picked early to preserve freshness and elegance.
Grapes
100% Sangiovese.
Vinification
Half of the must is obtained by direct pressing. The other half remains in contact with the skins for four hours before the cap is raised. The two lots are then combined, and alcoholic fermentation continues for 7–8 days at 15–17°C.
Ageing
Two months on the fermentation lees precede bottling.
Tasting profile
Pale antique pink in color, with a fresh, delicate style. Hawthorn, rose and wisteria appear over white-fruit aromas, joined by subtle tropical notes that return on the palate with an intense fruit character. The finish combines freshness and minerality with an elegant overall profile.
Serving and pairing
Serve at 10°C. Suitable as an aperitif and with medium-aged cured meats, savory pies, appetizers, pasta with vegetable- or fish-based sauces, white meats, and steamed or baked fish.
