About this wine

Vineyard and terroir

The Canale vineyard in Località Capraia covers 1.2 hectares at an average elevation of 250 m, with varied exposure. Castellina in Chianti combines Pliocene-era Galestro and Alberese formations, producing deep, cool and stony soils; the technical entry describes the soil texture as medium. The 15-year-old vines are planted at 4,000 vines per hectare, trained and pruned to Guyot, and yield an average of 1.5 kg per vine.

100% Vermentino.

Vinification

Harvest takes place in September. The wine undergoes light maceration, described technically as 10–15 days on the lees at controlled temperature. The tasting profile associates its slight tannic grip with 10–15 days on the skins.

Ageing

Ageing takes place in steel and cement.

Tasting profile

Golden and vibrant in color. Orange zest, Mediterranean herbs and chamomile lead the nose, followed by dried apricot and black tea. The palate is taut, fresh and saline, with a light tannic edge. A long citrus and iodine-inflected finish brings notes of almond and resin. The style is structured, mineral, savory and unfiltered in character.

Serving and pairing

Serve at 10°C. Pair with raw or marinated shellfish, fried, grilled or baked fish, seafood pasta, vegetables, grilled lamb or veal, soft cheeses, and salads with arugula.
