About this wine
Vineyard and terroir
Castel Selva comes from estate-owned experimental Chardonnay vineyards planted in San Gimignano in 1980. Its savoury, marine character is associated with the Casale territory.
Grapes
100% Chardonnay.
Vinification
White vinification begins with gentle pressing. The temperature of the fermenting must is controlled by cooling.
Ageing
The wine receives prolonged maturation on its lees in small French oak barriques. Around three years of bottle ageing is preferred before drinking. Careful use of French oak supports aromas of white flowers and aromatic herbs, followed by vanilla and sweet spices.
Technical data
Bianco Toscano IGT. Minimum alcohol: 13%.
Tasting profile
Light straw yellow with intense, brilliant golden highlights. The clean, concentrated bouquet recalls butter, pastry, fine spices, face powder, dried walnuts and candied orange. The palate is dry, mature and marked by marine savouriness, with honey, restrained orange notes and a mineral frame. It has substantial presence and persistence.
Serving and pairing
Serve at 10–12°C in a broad white-wine glass. Pair with rich appetizers, risotto, pasta, white meat, fine fish and shellfish, whether fried, grilled, boiled or seasoned with hot and exotic spices. It also works as an aperitif. The wine can develop for 5–10 years from harvest.
Label / history
An older Casale Falchini wine, Castel Selva was revived with the excellent 2015 vintage.
