About this wine

Vineyard and terroir

Paretaio has been produced since 1987 from the historic vineyard of the same name at Casale in San Gimignano. The Sangiovese and Merlot grapes are carefully selected and picked by hand.

Grapes

Sangiovese with a small proportion of Merlot.

Vinification

Traditional fermentation takes place in temperature-controlled stainless-steel tanks, with frequent pump-overs until completion.

Ageing

The wine matures for approximately 18 months in 225-litre French oak barriques, followed by roughly the same period of bottle refinement in the estate cellars before release. This extended maturation integrates its fruit, tannins and oak while developing aromatic complexity.

Technical data

Minimum alcohol: 13%.

Tasting profile

Deep ruby red, developing garnet hues with age. The bouquet combines ripe dark cherry and dried plum with subtle spice. The palate is dry, firm and structured, with balanced tannins, a savoury character, supple velvety texture and a harmonious, persistent finish.

Serving and pairing

Decant and serve at approximately 18 °C. Pair with grilled or roasted red meats, game, traditional Tuscan dishes and mild medium- or long-aged cheeses.

Label / history

First produced in 1987, the wine takes its name from the historic Paretaio vineyard.

Vintage notes

The published recognition extends through the 2020 vintage. The wine can develop in bottle for 8–10 years.
