About this wine

Vineyard and terroir

Selected Vernaccia di San Gimignano and Chardonnay are hand-picked from the estate vineyards at Casale in San Gimignano. A small proportion of other white grapes completes the blend. The area's minerality contributes to the finished wine's character.

Vinification

The grapes undergo white vinification and gentle pressing. The first fermentation takes place in temperature-controlled stainless-steel vats. After a short period in French oak barrels, the components are blended and bottled. A second natural fermentation then occurs in bottle with selected yeasts, following the traditional method.

Ageing

The wine remains in contact with the lees for at least 24 months and undergoes continual remuage in the estate cellars. Disgorgement is carried out every six months to preserve freshness.

Technical data

Minimum alcohol: 12.5%. Production is limited. Each label records the vintage, disgorgement date, total production and the individual bottle number.

Tasting profile

Extended lees contact and the mineral character associated with San Gimignano shape this vintage traditional-method sparkling wine.

Serving and pairing

Serve at approximately 4–6 °C.
