About this wine
Vineyard and terroir
The fruit is grown organically in the estate’s vineyards at Olivola, in the Ghenza Valley.
Vinification
The grapes are harvested entirely by hand at optimal ripeness. Spontaneous fermentation with native yeasts is accompanied by 15 days of maceration, without temperature control.
Ageing
The wine ages for 18 months before bottling, followed by a further year of maturation in bottle.
