About this wine
Vineyard and terroir
The Merlot comes from the 7-hectare Baffonero vineyard in Maremma, Tuscany.
Vinification
Fermentation takes place in stainless-steel tanks for 15 days at a controlled temperature of 27 °C, followed by malolactic fermentation.
Ageing
The wine matures for 14 months in new French oak barrels and then rests for a further 12 months in bottle.
Tasting profile
Powerful and lingering, with a distinctive aroma associated with this part of Maremma and a character of its own.
Serving and pairing
Decanting before serving helps the tannins come together and the aromas open fully.
Label / history
The wine’s character was conceived to evoke the centuries-old struggle between Tuscan wild boars and hunters.
