Vineyard and terroir
Cabernet Franc belongs to Le Selezioni di Castello di Gabbiano, a collection of single-varietal estate wines outside the property's traditional range. The series explores varieties selected for the vintages in which they achieve their best expression.
Grapes
100% Cabernet Franc.
Vinification
The grapes are harvested by hand into 15 kg baskets and gently destemmed. Alcoholic fermentation begins spontaneously with indigenous yeasts at a controlled 28–29 °C, using truncated-cone vats and open tanks. Daily punch-downs and frequent délestage accompany a prolonged maceration, with light wetting of the cap. Malolactic fermentation occurs spontaneously in oak barrels.
Ageing
The wine matures for approximately 16 months in first- and second-use French oak barrels, followed by at least six months in bottle.
