Vineyard and terroir
The fruit comes from Castello di Gabbiano’s estate Vermentino vineyard.
Grapes
100% Vermentino.
Vinification
The grapes are selected by hand and refrigerated immediately upon arrival at the cellar, limiting the extraction of tannic components and preserving fruit and freshness. One portion is pressed directly, while approximately 20% macerates on its skins for 24 hours at 5°C. Alcoholic fermentation lasts 15 days at a controlled 15–17°C. The directly pressed portion ferments in stainless steel; the macerated must ferments in third-use tonneaux. The two lots are blended approximately 20 days after fermentation finishes.
Tasting profile
Straw yellow with green highlights. Citrus and white-fleshed fruit alternate with sage and Mediterranean herbs. The palate is savoury, mineral, complex and persistent; skin contact and fermentation in wood accentuate the variety’s Mediterranean character.
Serving and pairing
Serve at 14°C. Pair with appetizers, seafood first courses, shellfish, crustaceans, vegetables, white meats and cheeses.
