About this wine
Vineyard and terroir
The fruit comes from sunny vineyards surrounding Castello Monaci in Salento, Puglia. The 50-year-old vines grow in fairly poor soils of varied origins, reddish from iron ore, and yield around 4–5 tonnes per hectare. The area receives abundant sunshine, while breezes from the nearby Mediterranean Sea provide constant cooling. Frequent rain in July is followed by fine, warm weather in August, benefiting grape quality.
Vinification
The grapes are harvested by hand during the first week of September, early in the morning at sunrise. Maceration lasts 15 days with frequent pumping over. Fermentation takes place at 24–26 °C, followed by malolactic fermentation.
Ageing
The wine matures in small oak barrels for about one year in a cool, dark room.
