About this wine

Vineyard and terroir

The grapes grow in Salento on deep, dry clay and limestone soils containing silica. Apulia’s sunny climate is moderated by cooling breezes from the nearby Mediterranean Sea, supporting finesse and balanced fruit character.

Grapes

A small proportion of Sauvignon Blanc may be added, depending on the vintage.

Vinification

The grapes are harvested early in the morning during the middle ten days of September to limit premature oxidation caused by the sun and heat. Traditional white-wine vinification is used: the grapes are gently pressed, the must is settled, and fermentation takes place at a controlled 15 °C.

Ageing

The wine is bottled in December.
