About this wine
Vineyard and terroir
The grapes grow in Castello Monaci’s vineyards in Salento, Puglia, amid centuries-old olive groves. The deep, dry clay soils contain deposits of tuffaceous limestone. The vineyards receive abundant sunshine, while the nearby Mediterranean Sea supplies constant cooling breezes.
Vinification
The grapes are harvested in two stages. Seventy per cent are picked during the second ten-day period of August; the remainder ripen for another month before harvest. After pressing, the earlier-picked fruit ferments at low temperature in stainless-steel tanks, while the later-picked fruit ferments in oak barrels. The two batches are blended in February and then bottled.
Ageing
The wine rests for a further 60 days after bottling.
Tasting profile
The bouquet has tropical-fruit notes. The palate is smooth and enveloping, balancing freshness with warmth. The wine is harmonious and refreshing.
