Vineyard and terroir

Produced from Sagrantino grown in Gualdo Cattaneo, in only a small number of bottles.

Grapes

100% Sagrantino.

Vinification

The grapes are harvested by hand and dried on racks under controlled temperature and humidity until they reach the intended concentration. Fermentation and maceration then take place at a controlled 24–28°C.

Ageing

After racking, maturation continues in accordance with the production rules: 37 months in total, including at least four months in bottle.

Tasting profile

Concentrated aromas evoke blackberry, cherries preserved in spirit and a finely spicy background. The palate is full, rounded and sweet without becoming cloying, with a slight initial tannic impression and a very persistent finish.

Serving and pairing

Serve at 14–16°C in tulip-shaped glasses. Pair with dried fruit, apple strudel or chocolate cake.

Label / history

Passito was the earliest style of wine documented as being made in Montefalco from Sagrantino, with references extending back through centuries of local chronicles. This interpretation combines the variety’s characteristic profile with the sweetness and supple texture of a contemplative dessert wine.
