About this wine

Vineyard and terroir

Sacer comes from selected Sagrantino parcels in Gualdo Cattaneo, chosen for their exposure and soil. The combination of site, exposure and microclimate gives the variety distinctive organoleptic qualities and produces a deeply coloured, concentrated wine intended for exceptionally long maturation.

Grapes

100% Sagrantino.

Vinification

The grapes are picked into boxes. Fermentation and maceration take place at a controlled 24–28°C, with daily pumping over and délestage. Once alcoholic fermentation is complete, skin contact continues at 29°C. After racking, the wine is transferred to oak barrels and receives weekly bâtonnage for six months.

Ageing

The Montefalco Sagrantino production rules require 37 months of total ageing, including 12 months in wood and at least four months in bottle. Sacer remains in wood for another six months after its initial six-month barrel phase. A prolonged period in steel and bottle follows, bringing total maturation before release to at least 12 years. It is the estate wine held longest in bottle before reaching the market.

Tasting profile

Deep red in colour, with an assertive bouquet of red fruit and leather. The palate shows pronounced tannic concentration.

Serving and pairing

Serve at 18°C in large glasses. Pair with roasted red meats, rich dishes and aged cheeses.

Label / history

Developed through years of work with the estate’s Sagrantino vineyards, Sacer was conceived as a cellar cru for long ageing. From its first production, the estate chose to delay release until extended maturation had brought the wine to the desired stage.
