About this wine

Vineyard and terroir

Ò di Còlpetrone originates from a particularly suitable parcel among the estate’s Sagrantino vineyards in Gualdo Cattaneo. Its character is presented as an expression of the grape’s intrinsic qualities in a place associated with the variety’s historical origins, rather than the result of an alternative winemaking method.

Grapes

100% Sagrantino.

Vinification

Fermentation and maceration proceed at a controlled temperature no higher than 28°C, with daily pumping over. After alcoholic fermentation, maceration continues for several days at 32°C. Racking takes place once the intended degree of polyphenolic extraction has been achieved, after which the wine is transferred to oak barrels.

Ageing

The wine spends 12 months in oak barrels, followed by prolonged maturation in steel tanks and bottle. Total ageing under the production rules is 37 months, including 12 months in wood and at least four months in bottle.

Tasting profile

Intense ruby red with garnet reflections. The complex, concentrated bouquet combines spice with red-fruit jam. The palate is powerful and dense, leading into a long finish.

Serving and pairing

Serve at 18°C in large glasses. Pair with roasted red meats, game, rich or elaborate dishes, and aged cheeses.

Label / history

The name begins with Ò, an exclamation of astonishment inspired by the reaction at the first tasting. The wine emerged from the cellar team’s work with one of the estate’s most suitable Sagrantino parcels, seeking to heighten the qualities inherent to the variety and site.
