About this wine
Vineyard and terroir
The vineyards lie around Montefi at 300 m above sea level and cover 150 ha. The soils are loose and rich in minerals, and the vines average 20 years of age.
Grapes
Rochetto is identified as one of the oldest grape varieties, with roots in the Greco family known since Ancient Greece.
Vinification
The harvest date is set according to ripeness indicators, particularly acidity and sugar levels. Picking usually takes place between the beginning of October and 20 October. Vinification and fermentation are carried out in stainless-steel tanks.
Ageing
The wine is not aged in barrels.
Label / history
The name dates to the 12th century. According to legend, Bishop Giovanni Defuc, travelling through Italy with Emperor Henry V, sent his page Martino ahead toward Montefiascone to announce the monarch’s arrival and locate an inn serving good wine. Martino was instructed to mark suitable places by writing “Est!” on the door. Finding the wine in Montefiascone especially impressive, he wrote the word three times and added three exclamation marks after the last one.
