Vineyard and terroir
Cantine San Marco stands on a small hill in the San Marco region, from which the winery takes its name. The volcanic soils are rich in potassium, calcium, magnesium and phosphorus, and low in nitrogen.
Vinification
Fermentation takes place traditionally in stainless-steel tanks at a controlled temperature.

Label / history
The name Est! Est!! Est!!! dates to the 12th century. According to legend, the Bavarian prelate Bishop Giovanni Defuk, travelling through Italy with Emperor Henry V, sent his servant Martino ahead towards Montefiascone to announce the monarch’s arrival and find an inn serving good wine. Martino marked suitable establishments by writing “Est!” on their doors. He found the wine in Montefiascone so excellent that he wrote the word three times, adding three exclamation marks after the last.
