About this wine
Vineyard and terroir
The grapes come from selected vineyards within the DOC area around Montefiascone, near Lake Bolsena. The vineyards occupy volcanic hills at 250–350 metres above sea level. The soils range from loose to medium in texture and contain high levels of potassium, phosphorus and carbon.
Vinification
Fermentation takes place in stainless steel tanks.
Ageing
The wine remains in stainless steel tanks, with fermentation and ageing together lasting 4–5 months.
Label / history
The wine has been known since the twelfth century. Its name is linked to a legend about the Bavarian prelate Bishop Giovanni Defuc, who accompanied Emperor Henry V through Italy. Sent ahead to Montefiascone to find good wine, his servant Martino was instructed to mark suitable inns with “Est!” The local wine impressed him so greatly that he wrote the word three times, adding three exclamation marks after the last.
