About this wine
Vineyard and terroir
The Vermentino vineyards lie at 150–250 metres above sea level and face north and northeast. Planting density is 6,400 vines per hectare, with Guyot training. The variety expresses the Mediterranean character of the estate’s coastal setting.

Vinification
Harvest takes place in the first ten days of September. After destemming, the grapes undergo approximately 100 hours of pre-fermentation cryomaceration. They are then pressed and fermented for 20–25 days in thermoregulated stainless-steel tanks under temperature control. The wine matures on its fine lees for three months and is cold stabilized.
Ageing
Two months in bottle follow the three-month maturation on fine lees.
Tasting profile
Bright straw yellow. The nose features white peach, citrus, intense floral nuances and wild mint. The palate is fragrant and full of fruit, with a fresh, persistent progression and lively savoury accents.
Label / history
First vinified in 2002, Pagliatura was among the early Vermentino wines produced in the province of Grosseto. It helped establish the estate’s interpretation of Maremma as a source not only of substantial reds but also of characterful, deep Mediterranean whites.
