About this wine
Vineyard and terroir
The wine takes its name from the hill vineyard that produces it: a wild site overlooking the sea and surrounded by Maremma scrub. “Bestiale” refers both to the difficulty of working its austere ground and to its untamed setting. The vineyard lies at 250 m above sea level, faces East–South–West and is planted at 6,400 vines per hectare. Training is bilateral spurred cordon.
Grapes
Cabernet Sauvignon, Cabernet Franc and Merlot. The varieties’ percentages are not specified.
Vinification
Harvest normally occurs in the second half of September. After destemming and soft crushing, each variety ferments separately for 20–25 days at controlled temperature in thermoregulated stainless-steel tanks. The wine is cold-stabilized.
Ageing
Each component matures for 14 months in 225 L medium-toast Allier oak barriques, 40% of them first-use. The final blend is assembled after barrel maturation and receives another 12 months in bottle.
Tasting profile
Deep ruby red. The intense bouquet combines ripe fruit and raspberry with spice and Mediterranean scrub. The palate is persistent and powerful, supported by an elegant structure and sweet tannins; the finish is balanced, long and fresh.
Serving and pairing
Presented as a wine for gastronomic dishes, with sweet, refined tannins in a classically Tuscan register.
