About this wine
Vinification
Selected grapes are harvested in mid-November, after the berries have dried slightly on the vines and developed higher levels of natural sugar. They are lightly frozen before pressing, then fermented in acacia barrels at a controlled temperature of 18 °C.
Ageing
The wine ages on its lees in barrels for 6 months, followed by a further 6 months in bottle.
