About this wine

Vineyard and terroir

The Cortese grows in organic vineyards in the heart of Gavi. Biodynamic methods are used throughout, including enriching the soil with special composts and preparations. The wine's character comes from the old hillside section of the vineyards, at ideal elevations, where the vines grow in mineral-rich soils and give grapes of exceptionally concentrated flavour.

Vinification

The grapes are picked late and entirely by hand. A short cold maceration follows, to add depth to the aromas. After gentle pressing, only 60% of the must obtained from whole bunches is fermented, which avoids coarse tannins and keeps only the delicate, concentrated portion. Fermentation takes place at low temperatures in stainless-steel tanks, preserving the grape's natural freshness and mineral character.

Tasting profile

Rich, elegant palate with floral and citrus aromas. Lively energy and refined character, pleasant when young. It gains complexity gradually in bottle.

Serving and pairing

Serve the 2024 vintage chilled with seafood or grilled fish. It also suits a summer picnic.
