About this wine
Vineyard and terroir
The fruit comes from selected vineyards certified organic and biodynamic. The vines grow in melliferous loam with a high organic-matter content.
Vinification
The grapes are harvested by hand and gently pressed, releasing the wild yeasts present on their skins. The must ferments in temperature-controlled stainless-steel tanks. When the required sugar level is reached, the temperature is lowered sharply and the wine is bottled immediately. As it warms, a secondary fermentation begins in the bottle, producing fine bubbles in accordance with the ancestral method (Pet-Nat).
Serving and pairing
It may be served as an aperitif. The bottle can be shaken before opening for a slightly cloudy wine with a more intense flavour.
