About this wine
Vineyard and terroir
The fruit comes from Puglia, from vines aged 60–70 years. Viticulture has been practised in the region for more than 2,000 years. The vineyards involved had low yields.
Vinification
The must macerates in small oak barrels for three weeks.
Ageing
The wine ages for a further 12 months before bottling.
Tasting profile
Rich and aromatic, with good structure.
Label / history
The name was coined by Farnese winemaker Filippo Baccalaro. On learning that one of the company’s wineries in the commune of Sava was due to close because of the low yields from its vineyards, he exclaimed, “This is madness!”—“folle” in Italian. The estate was subsequently saved from closure.
