About this wine
Vineyard and terroir
The vines grow at 220–300 m above sea level, in soils rich in limestone and marl. The area lies east of Lake Garda, and its location, climate and terrain allow each grape variety to show its full potential.
Vinification
The grapes are harvested by hand and dried in large, shallow crates in a well-ventilated room known as a "fruttaio". During drying they lose 40–50% of their weight, which greatly concentrates the sugar until the berries are more like raisins. Fermentation begins three months after harvest, in large stainless-steel tanks under strict temperature control. The must is pumped over twice a day.
Ageing
The wine is aged for 4 years in French oak barrels.
