About this wine
Vineyard and terroir
The grapes come from vineyards in Frascati, Monte Porzio Catone, Grottaferrata, Monte Compatri and Rome, at elevations of 200–400 m above sea level. The estate lies in Lazio, within the ancient agricultural area of Agro Tuscolano.
Vinification
Harvest runs from mid-September to late October, after which the grapes are taken directly to the cellar. Traditional white-wine vinification comprises gentle pressing and natural cold clarification, followed by fermentation with selected yeasts at a controlled 18 °C. The wine also undergoes cold filtration and cold bottling.
Ageing
The young wine rests in temperature-controlled stainless-steel tanks under nitrogen to protect it from oxidation.

Label / history
Frascati was first made approximately 2,000 years ago and was traditionally known as the “wine of priests.” In ancient times it was made for priests, while others drank it only during major Vatican church holidays. Marcus Porcius Cato discussed the region and its winemaking traditions in his treatise On Agriculture.
Fontana Candida was founded in 1958. Its estate occupies the site of an old Roman villa thought to have belonged to the poet Quintus Horatius Flaccus. The house emblem is a wide glass designed specifically for Frascati wines. The company produces 7.5 million bottles annually, of which 5.5 million are exported.
