About this wine
Vineyard and terroir
The grapes come from the 13 ha Santa Teresa vineyard in the commune of Frascati Superiore. The site lies at 200–300 m above sea level on volcanic soil.
Vinification
Each variety is harvested separately according to its ripening time. After gentle pressing, the Trebbiano and Greco musts begin fermentation immediately. The Malvasia must remains in contact with the skins for 12 hours before decanting and fermentation at 15–16 °C with selected yeasts.
Ageing
The wine rests in steel vats until bottling at the beginning of May in the year after harvest.
Label / history
Fontana Candida was founded in 1958. The estate is in Lazio, at the heart of the historic agricultural area of Agro Tuscolano, on the site of an ancient Roman villa believed to have belonged to the poet Quintus Horatius Flaccus. Marcus Porcius Cato discussed the region and its winemaking traditions in his treatise On Agriculture.
Frascati was historically known as “the wine of priests”: it was originally made for priests, while the wider population drank it during major Vatican religious festivals. Fontana Candida’s emblem is a broad wine glass designed specifically for Frascati wines. The company produces 7.5 million bottles annually, of which 5.5 million are exported.
