About this wine
Vineyard and terroir
The grapes are grown on a small plot in San Pietro. Heavy pruning limits the yield to half the usual amount.
Vinification
After harvest, the grapes undergo appassimento, drying on small bamboo racks on open verandas exposed to cool winds. Fermentation begins in February of the following year.
Ageing
The wine matures for one year in 5 hL barrels.
Serving and pairing
Pairs with desserts, pastries and cakes.
