About this wine
Vineyard and terroir
The grapes come from the company’s vineyards in Sannio Beneventano, at 250 m above sea level. The vines average 10 years old and grow in limestone and clay soils. Yields do not exceed 90 quintals/ha.
Vinification
The grapes are harvested in the first half of September. Whole bunches are pressed with the stems intact, followed by 10 days of vinification in stainless-steel tanks at a controlled temperature of about 15 °C. Secondary fermentation uses the Italian Charmat method in a sealed autoclave at 16 °C for about four months.
Ageing
After bottling, the wine rests for a further five months in the winery’s cellars.
