About this wine
Vineyard and terroir
The grapes grow in the company’s vineyards in Sannio Beneventano, at 150–250 metres above sea level. The soils are limestone and clay, and the vines average 16 years of age. Yields do not exceed 130 quintals per hectare.
Vinification
The grapes are harvested in the second half of September. Whole bunches are pressed without destemming, followed by light maceration to obtain the desired colour depth. Vinification takes place in stainless-steel tanks for 10 days at a controlled temperature of approximately 15 °C. Secondary fermentation uses the Italian Charmat method and lasts around four months in a sealed autoclave at 16 °C.
Ageing
After bottling, the wine rests for a further five months in the winery’s cellars.
