About this wine
Vineyard and terroir
The fruit comes from the company’s vineyards in Sannio Beneventano, at 250 m above sea level. The vines average 10 years of age and grow in limestone-clay soils. Yields do not exceed 120 quintals per hectare.
Vinification
The grapes are harvested in the first half of September. Whole bunches are pressed without destemming, followed by 10 days of vinification in stainless-steel tanks at a controlled temperature of approximately 16 °C. Secondary fermentation follows the Italian Charmat method, taking place in a sealed autoclave at 16 °C for around two months.
Ageing
After bottling, the wine rests for a further two months in the winery’s cellars.
