About this wine
Vineyard and terroir
The grapes grow on the northern slope of Mount Etna, in sandy volcanic soils rich in minerals. Some vines are up to 250 years old.
Vinification
The grapes are harvested entirely by hand, placed in small crates and taken to the winery for crushing and gentle pressing. Maceration takes place in steel vats for 12 days, followed by malolactic fermentation in small barrels.
Ageing
The wine matures for 24 months in old barriques, followed by a further 24 months in bottle in the winery’s cellars.
