About this wine
Vineyard and terroir
The Chardonnay vineyards are located in the municipality of Mango. They cover five acres, face south and sit at approximately 500 metres above sea level. The soils are calcareous marl with a sandy component, and the vines average 30 years of age.
Grapes
100% Chardonnay.
Vinification
Alcoholic fermentation takes place in second-use French oak barrels.
Ageing
The wine matures for 18 months in the same used French oak barrels, followed by approximately six months in bottle.
Technical data
Average production is 5,000 bottles. The first vintage was 1993.
Tasting profile
Fruit and floral aromas are marked by citrus, golden apple and linden. The palate is clean, fresh and savoury, with notable persistence and the capacity to benefit from ageing.
Serving and pairing
Serve at 10–13 °C in a Burgundy glass.
