About this wine
Vineyard and terroir
The grapes come from four estate vineyards at 300 m, with south-eastern exposure and marly-calcareous soil. The vines are Guyot-trained at a minimum density of 4,000 plants per hectare, with a yield of 70 quintals of grapes per hectare. Harvest takes place from late September to early October and is carried out strictly by hand. Only the best grapes from each vineyard are selected.
Grapes
Baccanera is a four-variety blend dominated by Barbera and Merlot and supplemented by other authorized Piedmontese varieties from the Langhe. Blend proportions vary with the vintage.
Vinification
Each variety is vinified separately. The grapes are destemmed and gently crushed, then fermented in contact with the skins. Malolactic fermentation precedes assembly of the final blend.
Ageing
After blending, the wine matures for 18 months in French barriques before bottling. It is intended for long ageing.
Technical data
Alcohol is 14.0% vol., with the precise value dependent on the vintage.
Tasting profile
The colour is a deep, dense ruby red. Aromas of wild berries and red plum are joined by hay nuances and spicy traces. The palate is fresh, savoury and full-bodied, with a pleasant tannic line, substantial texture and a long finish.
Serving and pairing
Serve at 16–18°C with substantial first courses, red meats—including rare preparations—game or semi-aged cheeses.
Label / history
The notably heavy, specially shaped bottle recalls bottles of the past and was chosen to emphasize the wine’s character.
