About this wine
Vineyard and terroir
Ravera is planted at 320–400 m on marly-calcareous soils and trained to Guyot. The vines are 10–12 years old, with 4,500 vines per hectare. The wine page gives a south-east exposure and a yield of 70 quintals of grapes per hectare, while the current English technical sheet gives south-west exposure and 50 quintals per hectare. Harvest takes place in October.
Grapes
100% Nebbiolo.
Vinification
The grapes are destemmed and softly crushed, then fermented in stainless-steel tanks at a controlled 28°C. The must remains with the skins and seeds for 18 days. Following racking, malolactic fermentation is encouraged under suitable cellar conditions.
Ageing
The wine matures for 42 months in 2,500 L large Slavonian oak casks, followed by six months in bottle before release.
Technical data
The wine page gives 14.0% alcohol by volume depending on vintage; the current English technical sheet gives 14.5%. Recommended serving temperature is 16–18°C.
Tasting profile
Bright, crystalline ruby red. The intense, full and persistent bouquet recalls dried roses, alpine flowers and fine wood. It has substantial structure, ripe tannins, good balance and acidity, with nuanced aromas that linger. Austere and severe in its early years, it retains its characteristic identity as it ages.
Serving and pairing
Serve with substantial red-meat dishes and mature cheeses. It can also be enjoyed after dinner.
