About this wine
Vineyard and terroir
The Cortese vines were planted in 1990 and grow in tuff-rich soils, which give the wine finesse and a pronounced aromatic character.
Vinification
Grapes are generally harvested by hand during the coolest hours of the day, in the second week of September, and placed in 18–20 kg crates. At the winery they go straight to a cold room and are chilled to 6 °C for several days, which preserves the bright aromas and prevents spontaneous fermentation. The carefully selected grapes are destemmed and gently pressed, and the must is left to settle. Fermentation takes place in stainless steel tanks at a controlled 18 °C for about 20 days.
Ageing
The wine rests on its natural lees for 4 months. After bottling it is kept in the winery's cellar at a controlled temperature until ready for sale.
