About this wine
Vineyard and terroir
The Marrone family’s vineyards are in Madonna di Como. The southeast-facing plots occupy rolling hills at 310 m elevation. Their relatively recent soils are mainly calcareous, with abundant quartz sand and very fine limestone alternating with compact layers of grey sandstone. The local climate is particularly suited to the delicate, aromatic fruit.
Vinification
The grapes are harvested by hand in early September and immediately chilled to 6 °C to preserve their aromas during pressing. They undergo four hours of cold skin-contact maceration. Fermentation takes place in an autoclave at 16 °C and is stopped by cooling the wine to −3 °C when it reaches 5% alcohol, retaining sweetness and creating a very light natural sparkle.
Tasting profile
Aromatic, with a gentle natural effervescence and sweetness that is pleasant without being excessive.
Serving and pairing
Pairs with focaccia-based appetisers and desserts including waffles, cakes and pastries. It may also be served as a digestif.
