About this wine
Vineyard and terroir
The one-hectare vineyard is at Cascina Fiori in Trezzo Tinella, on cadastral sheet 6. It lies at 400 m and faces southeast. The vines are planted at 4,700 vines/ha with 2.70 × 0.80 m spacing and trained to Guyot on a vertical trellis. The higher section is 20 years old and the other section 15 years old; yield is 70 q/ha. The relatively high elevation delays harvest and helps preserve the grapes’ natural aromatic intensity. Leaf cover shading the clusters during the final stage of ripening is adjusted each year.
Grapes
100% Moscato Bianco, an old variety appreciated since Roman times. Its berries develop an amber colour when fully ripe.
Vinification
The grapes are picked by hand into crates during the first ten days of September, then destemmed and crushed. A 12-hour cold maceration precedes pressing. The must is clarified statically for 48 hours at approximately 8°C and fermented in stainless steel; chilling is used to stop fermentation.
Ageing
Separate bottlings take place in November and at the end of February, with an optional third bottling in April.
Technical data
Production is approximately 15,000 bottles.
Tasting profile
Intense yellow colour. The fragrant, aromatic bouquet carries delicate notes of mandarin, grapefruit, white peach, flowers and sage. The palate is fresh, sweet and aromatic.
Serving and pairing
A natural partner for traditional Italian desserts, but also suited to more savoury combinations: moderately aged cheeses, salami with figs, or service as an aperitif. Grilled prawns offer a more adventurous pairing. A traditional household snack paired Moscato with bread and tuma, a sheep’s-milk cheese.
