About this wine
Vineyard and terroir
The vines are 15 years old on average and are cultivated biodynamically. The grapes are harvested entirely by hand.
Grapes
Grechetto Gentile (Pignoletto) is blended with small amounts of Riesling and Albana.
Vinification
Spontaneous fermentation with native yeasts begins in concrete vats without temperature control and continues in the bottle, where naturally produced carbon dioxide creates the sparkle. The wine is unfiltered and made without added sulfur dioxide.
Serving and pairing
Federico Orsi recommends shaking the bottle before serving to lift the sediment and pouring the wine cloudy.
Vintage notes
The 2020 vintage has gentle bubbles.
Label / history
The word “Vivace,” meaning “lively” in Italian, was chosen for the label in reference to the 2020 vintage’s gentle bubbles. The bottle is sealed with a metal crown cap.
