About this wine
Vineyard and terroir
The vines grow on black-brown, sandy volcanic soils containing effusive rocks and range from 30 to 100 years old.
Vinification
The grapes are harvested by hand in the second half of October. Fermentation takes place in truncated cone-shaped French oak vats, followed by 14 days of skin maceration and malolactic fermentation.
Ageing
The wine ages for 24 months in French oak barrels of various sizes, followed by 12 months in bottle.
Tasting profile
Distinctly volcanic in character, with a mineral structure, excellent balance and a long-lasting finish.
