About this wine

Vineyard and terroir

The wine comes from the Ginestra vineyard in Monforte d’Alba, Cuneo. The south-facing site lies at 300–350 metres above sea level and has a gradient of 30–35%. Its predominantly clay-and-limestone soil provides good water retention. The vines are approximately 35–38 years old, planted at 4,000 vines per hectare and trained to Guyot on a vertical trellis. Yield is 6 tonnes per hectare.

Grapes

100% Nebbiolo, predominantly the Lampia sub-variety together with Michet.

Vinification

The grapes are harvested by hand in October and carefully selected. After crushing and destemming, they macerate for 22–28 days in special tanks that promote gradual, continuous extraction from the skins. Once colour and extracted tannins reach the desired balance, the wine is drawn off and the first rackings are carried out.

Ageing

Traditional maturation takes place in oak casks, followed by an unspecified period in bottle, allowing the wine’s components to develop a balanced character.

Technical data

Alcohol is 14–14.5% vol. Total acidity is 5.3–5.8 g/l, expressed as tartaric acid, and net dry extract is 30–32 g/l.

Tasting profile

Dark garnet in colour. The nose is elegant and harmonious, with persistent fruit alongside spicy, balsamic and mineral nuances. The palate is warm and full-bodied, combining powerful aromas with balanced flavours. The finish is long and intense.

Serving and pairing

Serve at 18°C. Pair with roast veal, beef steak cooked with Barolo, or mature cheeses. The wine is suited to extended cellaring and can develop for more than 15 years.
