About this wine
Vineyard and terroir
The vineyards are in Madonna di Como, in the commune of Alba, at 280–300 m a.s.l. They have southwest exposure and soils rich in limestone and clay. The vines are Guyot-trained, while cluster thinning restricts the yield to 8,000 kg/ha.
Grapes
100% Dolcetto.
Vinification
Harvest occurs during the first ten days of September. Fermentation takes place in temperature-controlled stainless-steel vats at 24–26°C for eight to ten days, with several rackings. The wine undergoes malolactic fermentation.
Ageing
Six months in stainless-steel vats.
Tasting profile
Brilliant ruby red with intense purple reflections. The pronounced aroma evokes violets and blackberries. The palate is balanced and complex, combining fresh fruit, pleasant tannins and an almond nuance in the very long finish.
Serving and pairing
Serve at 15–16°C. Pair with Piedmontese starters such as carne cruda all’Albese, Russian salad and vitello tonnato; it also accompanies tajarin, agnolotti and meat dishes.
Ageing potential
Its characteristic qualities are most expressive during the first three to four years.
