About this wine
Grapes
The base combines Pio Cesare white wines. A small initial blend is used to extract the botanicals; Chardonnay and a portion of Moscato are subsequently added.
Vinification
Twenty-six aromatic herbs—including wormwood, marjoram leaves, gentian roots and orange zest—are macerated for almost 40 days in a small blend of Pio Cesare white wines and alcohol. The aromatic extract is then combined with Chardonnay, Moscato, sugar and additional alcohol.
Burned sugar completes the family recipe, giving the vermouth its characteristic amber colour and contributing to its distinctive aroma and flavour.
Ageing
The infusion matures for at least four months in very small stainless-steel tanks.
Tasting profile
Amber in colour, with the distinctive aromatic and flavour character imparted by burned sugar and the complex mixture of herbs.
Serving and pairing
A classic old-fashioned Piedmontese aperitif. Serve at cellar temperature and sip with a slice of lemon zest.
Label / history
Vermouth di Torino belongs to the Revival collection and is made in very limited quantities to celebrate the family’s historical roots and Piedmontese tradition. The name “vermouth” derives from the German word for wormwood, one of the 26 botanicals in the family recipe.
