About this wine
Vineyard and terroir
Capogatto comes from Vigneto "Volpe" at Ruffoli, in Greve in Chianti (Florence). The hillside vineyard lies at an average elevation of 400 m and faces south. Its sandy, silty soil is rich in loam and stones. The vines average seven years of age. Merlot, Cabernet Sauvignon and Petit Verdot are trained to low spurred cordon; Cabernet Franc is trained to Guyot. Vittorio Fiore and his sons cultivate the vineyard.
Grapes
The blend comprises equal proportions of four Bordeaux varieties: 25% Merlot, 25% Cabernet Sauvignon, 25% Cabernet Franc and 25% Petit Verdot.
Vinification
The grapes are harvested at the end of September. Alcoholic fermentation lasts 12 days in stainless-steel tanks. Bottling takes place in June or July.
Ageing
The wine matures for 18 months in 225-litre oak barriques, followed by at least eight months in bottle.
Technical data
Alcohol: 13.5%. Average annual production is 1,500–1,800 bottles of 750 ml. Standard packaging contains six bottles; six-bottle wooden cases are available on request.
Tasting profile
The aroma is refined and complex. The palate combines a suave, velvety texture with an austere character.
Label / history
First produced in 2007, Capogatto began as a challenge set by Jurij Fiore, a Burgundy-trained winemaker working here with varieties of Bordeaux origin.
