About this wine
Vineyard and terroir
Produced in Montalcino exclusively from estate-grown Sangiovese.
Grapes
100% Sangiovese. Whole bunches are picked by hand into crates.
Vinification
The intact bunches undergo gentle pressing. Contact between juice and skins occurs only during pressing, producing the pale pink colour. Fermentation takes place in temperature-controlled stainless-steel tanks; the base wines are then selected and tirage follows.
Ageing
The wine remains on its lees for at least 24 months at constant temperature and humidity in the historic cellars at Sant’Angelo in Colle. After disgorgement, it rests in bottle for another two months. The liqueur contains no added sugar, making this a pas-dosé sparkling wine.
Technical data
Traditional method; pas dosé. Annual production is approximately 4,000 bottles.
Tasting profile
Elegant and fresh aromas of small red berries are complemented by citrus and a broader underlying note. The palate is fresh, juicy, clean and dry while remaining balanced despite the absence of dosage. The persistent finish carries delicate bitter-citrus notes.
Serving and pairing
Serve at 6–8 °C. It can accompany smoked salmon, cured meats, fresh cheeses and traditional Tuscan first courses.
Label / history
Created in honour of Marchesa Clementina, grandmother of Leopoldo and Livia Franceschi. Her appreciation of great Champagne inspired this traditional-method sparkling wine from Montalcino. The first vintage was 2014.
